Concept

A presentation where the product comes first and the product stays good under the right conditions. That is the essence of food retail and the starting point for the implementation of the Leonidas kiosk in the market hall in Rotterdam.

The Market Hall is the first covered market floor in the Netherlands: good and tasty food under a very large arch.

The Market Hall is a food court in the striking curved-roof building. Within the food court are several kiosks where entrepreneurs offer their products; there is central seating.

Design

The design clearly identifies the Leonidas formula. Large refrigerated vtrines with brightre lights ensure that the product is the focus. Layout and furniture design must meet the requirements of good presentation, as well as ergonomics and health and safety.

For the presentation of chocolate, technique is very important.

Light determines the perception of the product. Fixtures were chosen with the right light color and intensity to showcase the products well.

Technology

But perhaps the most important part is refrigeration technology: chocolate is enn sensitive product. Put it in full sun and nothing will remain. But keep it too cold or too moist and it also loses its appeal.

The ideal storage temperature is between 10 and 18 degrees. So in summer, the cooling system will have to have enough power to still cool back to this temperature range during heavy use.

Also, hite should not be too cold or too humid: If it cools too far, the structure will change; if it cools too fast, condensation will form. Chocolate is a sensitive product and facilities must be adapted to it.

Project Management

The construction process must take place in an Operational Shopping Mall. In order to obtain the proper permits and approvals, NewArmstrong is also liaison for Tenant and Landlord. To open the site on time, we created and monitored the overall planning and construction schedule.

From project management, we also handled party selection, tendering and procurement, contract management, cost monitoring and execution control.

By creating a clear drawing set in advance that serves as the basis for pricing, we ensure that the bids are sound, the agreements on the work to be performed are clear and conclusive, and the risks are minimized.
